I only found a couple of refs (from the same 'non-native' source I think) for 'product restaurant' and I've also looked at 'product-based' and 'quality-product restaurant' but these don´t appear to be common terms. I take it to mean that the restaurant is based on a particular product, namely fish and seafood in this case. Would welcome any suggestions you might have. For the UK

"produce restaurant" gets Google 484,000 hits, though a mere 16,800 on a search restricted to the UK. I have NOT checked them all out!

Seafood restaurant

if that is what it is? Almost 16 million ghits.

By the way, seafood restaurants often have some other non-seafood items on menu as well

Have no quarrel with Lorena's answer but personally have never seen "speciality restaurant" over a door but rather have seen it phrased as "restaurant specialising in..."
