Thank you dear ladies with your cuisine skills and happy new year to all. ΚΑΛΗ ΧΡΟΝΙΑ ΜΕ ΛΙΓΟΤΕΡΑ ΔΕΙΝΑ (AND GOOD HEALTH )
Sounds like a delicious recipe for chicken! If I had to choose, I would prefer tangy over pungent for the vanilla sauce. Or maybe robust, as that is "round" like the taste of vanilla?

http://www.cooks.com/rec/view/0,171,151176-236196,00.html I found this one. Pungent could be probably used in this case or another ''strong'' adjective such as tangy (sweet and tangy sauce for fish)
I agree with Maya regarding the term "prevails over" - better than "suppresses", however the word "pungent" (please see spelling) usually has the connotation of an unpleasant odor or taste. For taste, even if it is not unpleasant, it is sharp and/or strong. The taste of vanilla is anything but sharp.

Good gracious me! the pungeant vanilla (?) sauce prevails over the subtle taste of fish
