If you have no further information "Factory" and "cellar" are both possible but the former tends to conjure up images of "Soviet sparkling wine" and the like made by the continuous method while "cellar" might suggest more up-market classic-method sparklers.

If you don't have any more info, "producer" is the safe option.

From the context using "local" I think they produce the wine and they sell it
