I think you have to leave the French term and provide an explanation. I believe this refers to the "liqueur de tirage" that is added to sparkling wines in the "méthode champenoise". This is a mixture of sugar, yeast and alcohol that is added after the initial fermentation.

agree Ruth Simpson : I agree with Mark. WSET Advanced level textbook refers to secondary fermentation after addition of yeast, and tirage is used in English.
