From a list of restaurants in Mallorca with a sample of the dishes offered at each (example starter, main and dessert for each restaurant).

From the list of desserts:

Crepes rellenos de manzana con helado de yema

I have been thinking about yolk and custards and how I can make this work with ice-cream... Can anyone with a better knowledge of the way "helado de yema" is made/tastes help me out?

It could be old fashioned, homemade ice cream. Many recipes call for egg yolks, sugar, cream and very little else.

Frozen Custard This term may be US-specific, as I don't ever recall seeing it elsewhere, but it is an extremely rich ice-cream variation and can be made in any number of flavors. My great-aunt made it with fresh peaches - I'm drooling with the memory.

Wendy, I didn't say it was vanilla-flavoured, I said that if the asker knows if it has vanilla in it, that suggestion would be valid. If not, of course it wouldn't be correct. If it is like the recipe you found, then it could be "rich orange-scented/flavoured ice-cream".

I don't see why it should be vanilla flavoured: I found a recipe for orange-flavour with egg. Also see link, which is anything but vanilla-flavoured.

Isa, that's a very good suggestion. I thought about putting "vanilla ice-cream" but it didn't say enough. Your suggestion works very well - please post it if you can so that you get credit for finding a solution for me. And thanks!

If you know that it's got vanilla in it you could say "rich vanilla ice-cream"...rich eggy ice-cream doesn't sound quite as appetising! Do you have the ingredients or can you find out what they are?

I'd keep the very Spanish name and add an explanation. Translating yema is like translating turron or sangria. If you don't have the recipe you also don't know if the "yema" in the ice cream was raw egg or crumbled/swirled yema added to another ice cream mix. I'm not sure about in Mallorca, but in Italy vanilla ice-cream is often made with a sort of custard which has quite a lot of egg yolks in it, sugar, milk (you can use cream for an even richer taste and creamier texture) and vanilla. It's left to cool and then put in the ice-cream maker...the result is fabulous!!!

custard ice cream?

I think rich vanilla ice cream is good too, assuming there is vanilla in it, which there probably is!

but I think custard ice cream could be another alternative - that makes it pretty clear eggs are involved.

also, to the English ear, I guess the idea of apples and custard is a familiar combination that would appeal.

golden ice cream

The best I can come up with so far would be something with golden in it. I vaguely remember a lovely yellowish ice cream from Cornwall but don't know if it had a specific name...

IMO anything with a mention of yolk is best avoided. Custard also sounds a bit naff to me but maybe that's down to memories of 1970s school dinners...

crème anglaise ice cream

If it's a simple eggy, custardy ice-cream, I think this could work.

lots of recipes for non-alcoholic egg nog. I grew up believing egg nog was without alcohol. My mother used to make it for us when we were ill (but I never got her recipe for it) and one of my brothers used to have one every morning at one point when he was training as a boxer, lasted a few months? then he gave up

agree Ana Clara Pérgamo : I think this is the most accurate one. Vanilla ice cream is different to egg-nog. Egg-nog would be the closest, to yema ice-cream.

there is non-alcoholic egg nog as well for children, athletes and invalids! (Rum extract can be used if authentic flavour is required)// agreed, don't know if this flavour, or if vanilla, custard, etc. AFAIC custard or egg icecream not as appetising:-)
