I'm translating a report on the detection of food colouring in olive oil manufacture and in the part describing the various chemical processes of fermentation the following phrase came up...
"El pH del fruto, aunque es ácido (pH = 6.7), no llega a los valores que se alcanzan por el proceso de fermentación (pH < 4.5), y esto justifica la mayor resistencia de las clorofilas iniciales a la reacción de feofitinización (sustitución del Mg por H)."
I've googled the term "feofitinización", which yields only a handful of results, and searched for the English term for substitution of Magnesium by Hydrogen, which doesn't give any single term for the process.
Anyone now what the English term might be for the process where Mg is replaced by H?

That's the equivalent term in English. Mind you, because it's so uncommon both in Spanish and English, you might be better off using a descriptive expression such as "replacement of the Mg central atom with an H atom".
