"Bruch" does seem a strange word to use here, but it can sometimes be a synonym for "Abfall" and this seems to make most sense to me here.
My reading is that the freezer breaks down and the tubs of ice cream stored in it then have to be discarded/thrown away, as once ice cream starts to defrost it is not safe to refreeze it.
Unfortunately, I can't find anything else in German to support this use of "Bruch".

Are they not describing that every time the freezer breaks down, there is a leakage that causes the level/amount of ice to increase in the collection tray?
