Credo che tu possa tranquillamente utilizzare "segno meno", visto che si parla comunque di un calcolo aritmetico della votazione; tanto più se, a seguire, viene fornito un esempio pratico.

Se si potesse sapere in quali casi è attribuito il meno (assenze alle lezioni, azioni disciplinari o altro) si potrebbe essere più precisi, ma credo che una formulazione diretta sia sufficientemente efficace.

Stando a questi link dell'università della Georgia e del Texas, l'attribuzione del +/- è a discrezione del docente:
"[...] The assignment of grades in a course is the responsibility of the instructor. The new plus/minus system provides more grade options, but how those options are used is the decision of the instructor."
