Anyone have any ideas about トレース管理?
I think I can say trace management if it was for data, but what does this mean for beans?

Perhaps トレース is a 和製 abbreviation of traceability in this case. It is talking about specifying the coffee farm, so it seems reasonable.

Product (bean) tracability control

Management is not exactly what they are doing here. They want to make sure that the beans all come from a good place so they are trying to CONTROL the source (tracing) of the beans.

neutral Joyce A : Yes, it is about "control" as you say, but it's not just about the source; it goes from the source, through production processes and is followed into the stores. This "traceability" also helps with issues of safety, too (which can be major).
