: I wonder if this is the right term in this case. I think "möra" (tenderize) is an active proces of for example hammering the meat. Whereas "besterven" is to let the meat hang for a while in order for natural processes to take place.

hard to tell without more context - it is just so that all meat must be 'bestorven', otherwise it isn't 'mör'
