The thing is I don't see any parallelism at all in the chapter; does the author really mean that there is some parallelism in chapter three although it's only in a minimal part of it?

: Yes, Ana is correct. The author is saying s/he sees some parallelism in Ch. 3 but not enough to be significant, so "the most part" lacks it.

Pero en el capítulo 3 (de Génesis) apenas obervamos esta figura / paralelismos
Como indica esta referencia, el paralelismo de la poesía hebrea bíblica abarca muchos aspectos. Así que es posible que lo que los eruditos llaman paralelismos a nosotros no nos parezcan tal cosa. Por ese motivo, respetaría la idea del autor, que es el experto, y traduciría "for the most part" como te propongo o como mejor veas que encaja en tu contexto.
