This is for "foie gras avec morceaux". I understand the idea, just not how to say it in English. I can't speak French, so if you respond in French, keep it simple, please.

This document is translated from a French document issued by CIFOG ((Comité Interprofesionnel du Foie Gras), but I can hardly imagine that *lumps* is a term which is going to be of much use to Ben!

"Article XIX – Regulated Foie Gras appellations
A 1993 order states that only preparations containing 100% Foie Gras
may bear the name “Foie Gras”: whole Foie Gras (whole Foie Gras or
one or more lobes of Foie Gras), Foie Gras (pieces of lobes lumped
together) and block of Foie Gras (reconstituted Foie Gras which may
include pieces of lobes).

Avec morceaux Unfortunately, all of the google hits in English for "with pieces" seem to have been written by people without a complete grasp of English, to judge from surrounding errors. Elodieusa's petrossian link is very informative, but the problem still applies. However, I would read into what is said on that page that there must be legislation about what you can and can't call foie gras in its various forms: "Fully molded foie gras (9¨% or more). It can contain full pieces of foie gras and is therefore called "Block of Foie gras with pieces", or "avec morceaux", it should contain at least 30% pieces. Could be, which is why I suggested that one might want to specify what the pieces are, though the original French doesn't say anything about mousse.

True enough, but you you know living in one of the meccas of foie gras, that's what they feed the pets around here ( chidding). Thanks Sheila
