This sentence is taken from a "Mietbürgschaft". The guarantee is issued to cover the tenant against claims from the landlord.
I understand that the "Einrede der Verjährung" relates to a defence under the statute of limitations but don't understand what the entire sentence is trying to say.
I understand it as something along the lines of "we waive this defence as long as the tenant isn't actually entitled to use this defence"?

I understand it as you do, i.e., I think your translation is fine.
The thing to remember is that a Bürgschaft (surety) is a relationship between the creditor and a third party (not the debtor).

ist der offizielle terminus technicus für "Einrede der Verjährung", das müsste irgendwie mit in den Satz rein, da der Kontext ja reines Vertragsdeutsch ist.
