Port Just a comment: not sure if it's a UK thing, but I nearly always say "port" rather than "port wine" (which I notice a lot in US recipes) - in context it's always understandable as the wine rather than a place where ships go in and out ;-)

Do you mean boil away the liquid, i.e., the port wine?

If so, it is "simmer to reduce"
