Portuguese term

lombos de peixe

Portuguese to English Other Cooking / Culinary
This is one of the ingredients in a Portuguese recipe:

"2 lombos de peixe (pescada, cherne, etc)"

Are they just fish fillets or a more specific cut like 'butterfly fillets' or something?

Discussion

Catarina Aleixo Jul 24, 2008:
No worries, this is here to help out. I would say that in the Uk at least what are classified in POrtugal as Lombos and filetes, would eb considered to be fillets. A fish steak is cut across the grain (like a "posta" but with the boens removed).
Marcos de Lima (asker) Jul 24, 2008:
Hi Catarina. Yes, it does, thanks. I may have been just a tad hasty in closing the question...
Catarina Aleixo Jul 24, 2008:
Hi. I was about to say fish fillets, if that helps.

fish steaks

It is another option. Usually, in Portugal, fillets are thinner, and "lombos" (steaks) are taller, such as tuna or a cod steak.

"postas de peixe" are pinboned (you just cut the fish into thick slices", "lombos" do not have any bones (it is like a fillet, but thicker)
Note from asker:
Hi Catarina. I wondered about this, but I'd already used 'fish stakes' for 'postas de peixe'. Are they the same thing then?
erm, or even steaks...

fish fillets

i.e. not cut across the bone.

"Fillets" would also work.
