OK this is another of these ultra-modern-science-kitchen-type restaurant menu entries. These are two examples of accompaniments or sauces called 'aires'. Is this likely to be like some kind of foam? I checked ole Heston Blumenthal out and he does a whole load of foam type things...This is as close as I've got on my own investigations...Any ideas?

This may help:
Sin lugar a dudas, cada vez oiréis más habitualmente en la cocina moderna, los aires, como aire de espárragos, de trufa, de mar, etc. como complementos de platos de restaurantes de alta cocina.

Estos aires, se consiguen después de cocer los ingredientes que deseamos, hasta conseguir el sabor que busquemos. Después se mezclan con lecitina y se dejan enfriar en la mayoría e los casos, para crear burbujas de aire con la ayuda de una batidora.

Se recogen esas burbujas y ya lo tenemos. Hay más métodos, pero esta manera es la más habitual.
