Ostra nacional con helado de citronela, clorofila de estragón aireada y tierra de anís con hierbas de marisma.
For those of you who have seen my previous questions I'm afraid we've gone from ultra-posh sounding menus to a kind of alternative restaurant, with lots of claims about fresh, local and seasonal ingredients. Makes me wonder if this is 'dried tarragon' and they don't want to say?? Or am I just being suspicious. as for chlorophyll in cooking...Not finding much so far. All suggestions welcoms and thanks in advance. To UK Eng. :)

Sorry for being facetious. If you have to put this on a menu, skip the (repulsive-sounding) "clorophyll" entirely and use something like "essence of tarragon"

with tomato nage, tarragon foam & osetra caviar"
