Besonders morbide und gefährdete Stellen am Objekt (Schollen, Schuppen)....
I am going to use flakes here for the German Schuppen...I am not sure what they mean by Schollen in connection with stone/rock...

I have the impression that the two terms are quasi-synomous (perhaps regional variants) -- if you google Schollen, among the hits are a couple where 'Scholle' is used in the sense of plate in a map of continental plates.
IMO an English-speaking expert would probably speak of 'flaking and exfoliation' (which are also quasi-synonymous).
