Eigentlich ist meine Frage eher: was ist das? Ich finde es immer nur unter "Ventricina" als eine Art Salami, aber der Text besagt:
mentre dal grasso scartato durante le lavorazioni si ottiene l’”assogna” o “sogna”, condimento tipico della cucina abruzzese
Die nennen es also "condimento". Ich habe also eher Probleme mit dem Wort "condimento" in diesem Zusammenhang.
