At UQ they are called course profiles.

Or "course syllabus" if this refers to a single course. But you mention "an education" - that term is much broader than just one course and encompases a complete program of universityy study (4+ years). In that case, "curriculum" or "program of study (for the major)" would work for U.S. English. If this document includes the actual grades given to a specific individual for the courses taken in the given program of study, it would be a "transcript of courses". If this is a general description of general education, prerequisite, minor field and major field courses though, then it would be a "course curriculum"/"program of study". Those would work for U.S. English depending on the context.
