icing/powdered/confectioner's sugar

Sucrose is simply another name for sugar. Of the terms suggested above, icing sugar is more common in Britain.

neutral psicutrinius : I fully agree. The point I tried to make is that if you see "sucrose..." in Spanish, the writer is not describing confectionery ingredients, but chemicals ("impalpable" reinforces that), else he would have said "azúcar flor"... or he wishes to impress.

I think it doesn't make any difference whether Cecil chooses powdered sugar or powdered sucrose. Both are used in patents describing various methods of production, for example. What you say is valid for icing (and confectioner's) sugar, though.
