Cattle, shoulder , trimmed

Sf should be storfe, which is our way of saying any large farm animal - cow/bull, or sometimes horse, moose or reindeer. Bogplomme means the centre of the shoulder, while Rensk. is renskåret, or trimmed of fat and rind.
