This is listed as a profession of one of the people working at a market hall (others include Buchbinder, Seifenmacher, etc.)

I thought maybe "sandwich maker" but I think that's more a machine than a person. Any other ideas? MT.

the person makes "Aufstrich", and that is everything that can be spread on a sandwich. Aufstrich can be made from vegetables, mushrooms, in combination with yoghurt or cheese, or with fruits, nuts, chocolate...and so on, there are hardly any limits.

sandwich spreader

I understand your concern about 'sandwich maker', although I think it would fit OK into a list of market stall jobs. Considering the nature of 'Aufstrich', I think 'spreader' sounds fine.
