: Не буду отрицать, что, наверное, в 70% случаев фуршет холодный, но я лично присутствовал на нескольких деловых фуршетах, на которых подавали горячее на сервировочных столиках, поэтому думаю не стоит здесь подчеркивать, что это cold buffet.

I bow to your superior knowledge of Russian restaurants, but my impression it isn't about restaurants but about feeding a businss gathering of some sort. BTW, I also searched Google images and saw a lot of cold dishes arranged on tables buffet style..

: FYI, "à la fourchette" - не “на скорую руку“, а “на вилочку“.May last longer than a sit-down dinner. Buffet dinners may be either hot or cold, or both – no matter whom you feed and where. "Cold", here, is a liberty absolutely unwarranted by the context.
