Never having heard of a 'capstone' project, I can only add that, for us (great-grand-) parents in some countries like Austria for A-Levels (Matura) or Germany (Abitur), the compulsory paper is called a 'Scientific Assignment'.
At university undergrad or postgrad level, it is called an 'extended dissertation' e.g. upgrading a(n) historically questionable English Bar Exam 'Degree' to an LLM.

For lack of any sort of official translation, how about something like 'capstone' or 'capstone project'? That's what this sounds like to me, anyway.
