I think you can use "pressing," but then "during pressing" by all means. It's simply more specific and less ambiguous. For the formulation, you can also google similar processes like "strain hardening" and "compaction"

then probably "the pressing process", as in your wiki -- more specific. There both "during" and "in" would work.
