Extra I've come across this information for ASPARAGUS grading.

Choice is this thinnest of the grades Choice: 6-10mm width.
Select is most popular and versatile. Select: 10-16mm width.
Extra Select is slightly thicker and more popular for eating whole, as opposed to putting it into a quiche or soup for flavour. Extra Select: 16-20mm width.
Jumbo is the largest of them all with very thick stems making it very fibrous and jumbo. width 20mm or over.

Extra We use "premium" for "chorizo extra" so I would very inclined to reflect that usage.

yes, as you suggest, I think the "al natural" just means without added flavouring like herbs, garlic, spices, etc., but I think it might be omitted in English - "plain" would sound odd - and if there are other types the label would say "choice whole peppers with herbs".
Also, if they're "envasado al seco" they're not in brine, surely?

or perhaps "finest whole" or "Finest quality whole". I am not sure whether "extra" here is simply descriptive and unquantifiable or whether it's a specific categoiry. I see "extra quality" is used for these peppers in Google, but that seems pretty vague to me too.
