Source text - Greek Τι είναι άραγε αυτό που κάνει το ελαιόλαδο πραγματικά μοναδικό;
Είναι μοναδικά πλούσιο σε μονοακόρεστα λιπαρά οξέα (MUFA), εξαιρετικά πολύτιμα στη σύνθεση των λιπιδίων, που εφοδιάζουν με ενέργεια τα ανθρώπινα κύτταρα, τα “δομικά” υλικά του οργανισμού μας.
Περιέχει τα ζωτικής σημασίας λιπαρά οξέα, ελαϊκό, λινολενικό και λινελαϊκό.
Bοηθά μεταξύ άλλων και στην απορρόφηση των βιταμινών από τον οργανισμό και χάρη στην υψηλή περιεκτικότητά του σε πολυφαινόλες, συμβάλλει στη μείωση της οξείδωσης των ιστών του σώματος, ενώ είναι η πιο ανθεκτική, σε σχέση με τις υπόλοιπες λιπαρές ύλες όμοιας σύνθεσης, σε υψηλές θερμοκρασίες.
Επιδρά θετικά στην αύξηση και στην ανάπτυξη του οργανισμού, επιβραδύνει τη γήρανση χάρη στα λιπαρά του οξέα, στο μεγάλο ποσοστό βιταμίνης Ε και στην παρουσία γενικότερα αντιοξειδωτικών οργανικών ουσιών (υδρόξυτυροσόλη, τυροσόλη, Se κλπ.), που εμποδίζουν την οξείδωση και τη δράση των ελεύθερων ριζών (3).

Es únicamente rico en ácidos grasos monoinsaturados (MUFA), extremadamente valiosos para la composición de lípidos, que suministran la energía a las células humanas, los materiales de “construcción” de nuestro organismo.
Contiene ácidos grasos, oleicos, linolénicos y linoleicos vitales. Entre otras cosas, ayuda a la absorción de vitaminas del cuerpo y gracias a su alto contenido en polifenoles, reduce la oxidación de los tejidos del cuerpo, mientras que sea el más resistente, en comparación con otros materiales grasos similares, a altas temperaturas.
Además, tiene un impacto positivo en el crecimiento y desarrollo del organismo, retrasa el envejecimiento, gracias a sus ácidos grasos, su gran proporción de vitamina E y la presencia general de sustancias orgánicas antioxidantes (hidroxitirosol, tirosol, Se, etc.), las cuales impiden la oxidación y la acción de las raíces libres (3).
Asimismo, ayuda a controlar el colesterol y afecta positivamente contra el endurecimiento de las arterias, la aterosclerosis, una de las principales causas de muerte en las sociedades occidentales modernas.
El ácido oleico monoinsaturado, es altamente resistente a oxidaciones bioquímicas y metabólicas, que son responsables por la aterosclerosis, sino también por el comienzo del crecimiento de células cancerosas.

Στη Σαντορίνη οι οικισμοί hamlets διακρίνονται σε γραμμικούς linear (Φηρά, Οία, Θηρασιά), εξελιγμένους οχυρούς (Πύργος, Εμπορείο, Ακρωτήρι) και υπόσκαφους (Βόθωνας, Φοινικιά, Καρτεράδος). Τα κτίρια ήταν υπόσκαφα, κτιστά, ή ημίκτιστα. Τα πιο διάσημα κτίσματα του νησιού, τα υπόσκαφα, είναι λαξευμένα στο κάθετο μέτωπο του στρώματος της άσπας. Χαρακτηριστικό των υπόσκαφων είναι η απλότητα και η πλαστικότητα των όγκων καθώς και το ότι «διεισδύουν» το ένα πάνω στο άλλο. Αυτή η μορφή σπιτιού αποτέλεσε πηγή έμπνευσης για τους αρχιτέκτονες των αρχών του 20ου αιώνα –μάλιστα επηρέασε, μεταξύ άλλων, τους Le Corbusier και Alvar Aalto.
Στις περισσότερες εκκλησίες του νησιού κυριαρχεί η λαϊκή αρχιτεκτονική. Εντυπωσιάζουν οι κατάλευκες επιφάνειες που έχουν διάφορες μορφές. Δεν έχουν αρχιτεκτονικό διάκοσμο και διαθέτουν λίγα και μικρά ανοίγματα.
Translation - English Architecture.
The settlements of Santorini can be distinguished in linear (Fira, Oia, Thirasia), fortified (Pirgos, Emporio, Akrotiri) and vaulted ones (Vothonas, Finikia , Karterados). The buildings were vaulted, built or half built. The most famous structures of the island, the vaulted ones, are dug in the vertical layer of the so-called “aspa”, the volcanic ground of Thira. The main characteristics of these vaulted structures are the simplicity and the harmony of the volumes, as well as the fact that they “penetrate” each other. This building style influenced the architects of the early 20th century – it also influenced Le Corbusier and Alvar Aalto, among others.
In most churches of the island vernacular architecture prevails. The white-washed surfaces of various forms are impressing. These churches have no architectural adornment and a few, small openings.
