The 'dobladores' in the encierro are the men with capes in the bull-ring, who guide the bulls to safety by means of their capes. If things go really wrong, they can sometimes come out onto the street to lead the bulls into the pens in the bull-ring. They lead, and the ´pastores´(herders) bring up the rear with long canes. Now can anyone think of one word or a short phrase to translate 'doblador'? It's for a PowerPoint presentation, so it can't be very long.

Explanation:
I doubt there will be an official translation in English for this. From the job description, this could be one option. (As in horse-wrangler, probably partial translation of Mexican Spanish caballerango groom, stable boy...)
