Potassium metabisulphite (E224) Explanation: Potassium metabisulphite, known as the “guardian of wine”, is a white crystalline powder of rough, sulfur odor. It serves as an antioxidant or chemical sterilizator. It is also used as a food additive. Potassium metabisulphite is very common addition to wine, in which it forms SO2 which prevents growth of wild organisms and acts as a powerful antioxidant, protecting the color and delicate flavor of wine. It is also used to clean wine-making equipment. In production of beer, it prevents growth of wild yeasts, bacteria and fungi in a process called stabilization. It is also used to neutralize chloramines added to tap water as a disinfectant. ...
