neutral  Douglas Bissell: Cashing-up also involves checking the amount against the takings. Here they are just removing money for security's sake so there is never more than (€500?) in the till

neutral  R. Alex Jenkins: Agree with Douglas. Cashing up is what you do at the end of the day to verify the takings. This is simple 'bleeding' of the till, except we don't use that expression in English.

Explanation:
I've seen this as the option on the till display software in the supermarket (in Brazil). The important factor is that the cash is 'withdrawn' or 'picked up' at a pre-defined level or limit so that no amount of excess cash remains in the till.

Explanation:
The last time I came across this term I went to the shop in question and the manager said they could not have more than €500 in the till for security reasions so they woukld take out most of the large notes, enter how much they were removing (not what they were leaving) into the system and put the notes in the safe. There was no checking of whether the amounts registered were correct or not. HIH
