I am very sorry to have to close this question without grading. It's not what I wish, but the end client has not been able to cast any light on this term. I suspect they don't know. As far as I know it was originally written in Portuguese. I have over a dozen recipes for bread and biscuits from traditional bakeries in a municipality near Porto, all of them dating from the late 19th century to 1935. I'm beginning to believe that pizão is a regional or obsolete word, so I have asked the client, who is an archivist in the same locality.

Afinal, são 2 kg desse tal ingrediente misterioso para 3,5 kg de manteiga e 7 l de cerveja, por exemplo.
