Następnie należy usunąć nadmiar soli, piersi zszyć parami skórą do zewnątrz. Wędzić przez 48 godzin przy użyciu drewna wiśniowego. sos: 1 kg śliwek 70 g masła 0,2 l czerwonego wytrawnego wina 100 g cukru 100 g igieł sosny Śliwki wypestkować, skarmelizować z odrobiną masła i cukru, wlać wino czerwone i odparować, dodać zblanszowane igły sosny.
