上記の文中の「操作」の訳語を handling にしようかと思ったのですが、この検査で言う場合は、Fine motor ability とすべきでしょうか。
また、「未確立」はこの場合、unestablished で良いのでしょうか?

まず、原文の日本語が悪文ですね。

「両手を交互に使う」などという表現は、言いたいことはわかりますが、正しくありません。

操作が未確立、という日本語も私は奇妙に感じます。操作能力が未確立、ならわかります。

全体の文脈から操作とは「操作する能力」=運動技能との判断ならfine motor skillでもOKだとおもいます。

一方で、fine motor skillがどの程度発達しているかを調べるために色々な「操作」を被験者にさせるのではないですか。この場合は、操作の訳語はmanipulationではないかとおもいます。
