The context is the Background Art section of a patent:
また、免疫現象の主役である抗体もタンパク質であり、生命現象を調節しているホルモンの多くもタンパク質である。このように、生体の主な機能はすべてタンパク質が担っているとさえいえるほど、タンパク質は働きも種類も多く、生体維持に重要な栄養素である。

I'm having trouble with the second sentence, especially how to deal with さえいえるほど.
