soil puddling Explanation: If 田かき is also 代かき then I get soil puddling in my dictionary. It seems to be something related to rice cultivation. Upturning rice field with Nakanomata-oxen Explanation: I think 田かき is one of operations of rice cultivation and is currently done in every rice field, not a extinct custom. So what they want to 復活 should be the same operation WITH Nakanomata-oxen, instead of machines. So far I believe it might be better not to separate with 中ノ俣牛。 Of course, maybe there would be a better suggestion for "upturning rice fields" part. Hope it helps.
