sweetness - savoury Explanation: some mineral waters are sweet, especially when they have very specific mineral content, while others could be considered savoury depending on the the minerals that predominate. Here you might say ''a delicately savoury quality". Of course this is merely my opinion from my experience with and preferences for mineral waters. Others might have a better suggestion. |

softness - sapidity Explanation: Personally I would keep close to the source with sapidity...I don't think many other terms could translate it when referring to water. Freshness - Taste Explanation: As you said yourself, 'aqua dolce' is 'fresh water'. For me it's not ambiguous, as freshness is an important element when it comes to drinking water. Sapidity is not commonly used in English. If something is sapid, it has a pleasant taste.
