My guess is that it means something like "retention," but I don't really understand it.

more context It's about whether the person is still showing improved scores on the measurements instrumemts at the various follow-up measurement points. I think Johanna has nailed it.

I'm assuming n is the number of patients, and if my sums are right, there were 332. But it's hard to know what Ausschöpfung means without a bit more context about the trial.
What is the relevance of "one year after discharge" and "any catamnesis available"? Catamnesis is follow-up history.
"Utilisation" is a possibility.

utilization rate: the percentage of respondents with whom an interview is conducted
of the total number of respondents selected
I agree that this is hard to grasp from the context. It could be said that the response rate is different from the utilization rate. It is a subset of the response rate.
Example sentence:

"Ganz allgemein definiert entspricht die Ausschöpfungsquote dem prozentualen Anteil der Befragten, mit denen ein Interview realisiert werden konnte, an der Gesamtzahl aller ausgewählten Befragten"
