German term or phrase: abgedeckt
Currently translating a cookbook and there are frequent references to cooking something "abgedeckt". It's impossible to tell from the context whether this means uncovered or covered and it seems "abdecken" can mean both to cover something *and* to uncover it! Does anyone know which meaning it has when used solely in a culinary context? Thanks.

Soll man den Tee zugedeckt ziehen lassen? «Ja, weil Wirkstoffe wie ätherische Öle (Pfefferminze, Melisse etc.) ungedeckt stärker verdunsten.»
