On reflection, my question is what is being gilded? Are the tools for working wood that is subsequently gilded? If so, this answer is fine.

If the material being worked is gesso, then “gesso carving hook” is probably more appropriate. You will know from your source text, I presume, which materials apply. The décor of old theatres and opera houses was made of a variety of materials. Anyway, I’m sure you know this ;-) Just appending it for future visitors as much as anyone.
