Les cavistes, eux, sont autorisés à ouvrir au titre de «commerce de détail de boissons en magasin spécialisé». En ce qui concerne précisément la chaîne Nicolas, que vous évoquez dans votre question, celle-ci avait décidé dans un premier temps de fermer malgré tout l’ensemble de ses enseignes. «Nous avions pris la décision de fermer alors que nous étions autorisés à rester ouverts, car nous ne savions pas comment nous organiser, explique aujourd’hui le caviste. Pendant la première semaine de confinement, nous avons réfléchi à un plan de sécurité adapté, pendant la deuxième semaine, nous avons demandé à une vingtaine de cavistes volontaires de rouvrir en testant ce plan, et depuis le 1er avril nous rouvrons progressivement nos magasins.»
