Résumé : À l’embouteillage des vins tranquilles, le CO2 doit être ajusté à un niveau désiré compris entre 300 à 1 500 mg/L et l’O2 doit être réduit du mieux possible, les entrées d’O2 étant réguléespar l’OTR de l’obturateur. Pour atteindre ces objectifs, l’INRA est équipé d’une ligne d’embouteillage pour vins expérimentaux de 10 à 100 L avec contrôle et gestion des gaz dissous sur les 3 éléments constitutifs de la chaîne : 1 palette de filtration-contacteur membranaire, 1 tireuse monotête avec inertage de la cuve de tirage et des bouteilles et 1 boucheuse monotête avec couplage vide-gaz inerte. Les teneurs en O2 et CO2 sont ajustées grâce à un embout fritté dans la cuve de préparation ou/et par contacteur membranaire. Le vin est poussé dans le circuit jusqu’à la cuve de la tireuse grâce à une surpression de 100 KPa de gaz neutre exercée sur la cuve de préparation. Cette ligne permet d’obtenir des lots homogènes de 10 à 120 bouteilles avec une teneur en O2 total < 0,7 ± 0,2 mg/ bte de 75 cL couplé à une teneur en CO2 ajustée au type de vin tranquille à ± 100 mg/L.

Abstract: At bottling of still wines, CO2 needs to be adjusted to a desired level between 300 and 1 500 mg/L and O2 must be reduced as much as possible, O2 ingresses being regulated by the OTR of stopper. To reach these goals, INRA is equipped with a bottling line for experimental wines from 10 to 100 L with control and management of dissolved gases on the 3 following constituent elements of the line: 1 membrane contactor-filtration skid, 1 single head filler with neutral gas inerting of fi ller tank and bottles and 1 single head corking machine with possibility of coupling vacuum and inert gas. Contents of O2 and CO2 are adjusted thanks to a porous injector in the preparation tank or/and by the membrane contactor. The wine is pushed in the circuit until the filler tank thanks to an overpressure of 100 KPa of neutral gas applied on the preparation tank. This line allows toobtain homogeneous batches of 10 to 120 bottles with a total O2 content < 0.7 ± 0.2 mg/bt of 75 cL coupled to a CO2 content adjusted to the type of still wine at ± 100 mg/L.
