This is in the recipe for doughnuts. I am not sure what it means in this context.

Heat oil in deep fryer to 375 degrees F (175 degrees C). Fry one layer of doughnuts at a time. Turn doughnuts as they rise to the surface until golden brown, about 2 to 3 minutes. Remove from oil, being careful not to poke doughnuts. Drain onto paper towels.

I assume this is a recipe for a jam- or custard-filled doughnut. The way these doughnuts are made, after frying them they are injected with the filling. If you accidentally poke a hole in them, the injected filling my ooze out that hole later. I think that's what it is.

Actually I've just seen a recipe which warns of poking, but where the jam is placed inside the dough prior to frying (http://allrecipes.co.uk/recipe/4505/jam-doughnuts.aspx) . In any case, the "not poking" advice is clearly to stop the jam from leaking.

Asker: Here is the recipe: http://answers.yahoo.com/question/index?qid=20070613050141AAfffKJ The filling is put into doughnuts while their forming but I also thought about piercing.

Asker: I think they are of the shape of half-moons, not like the round doughnuts that i know.
