I have noticed that with this type of wording, it is highlighted that the medical professional in question is both a specialist in their field as well as being a consultant (example below). I would agree with this as "professional/specialist consultant", in my opinion, would infer that the person in question has excellent consultation skills in the field, but potentially not the education or training to practice that particular kind of medicine.
