The text mentions specific types of skær:

Vi fremstiller knive med forskellige skær, afhængig af kundens ønsker.
Det mest brugte er centerskær eller dobbelt centerskær.
Men også sideskær er lagervare.

My first thought is of course edge, but I am not finding many hits for "double centre edge blade" which has me doubting.

Anybody know?

As for your 'dobbelt centerskær,' all you have to do is change your word order slightly - it's obviously a double-edge(d) knife or blade:

But now we come to the question of centerskær and sideskær. If you were in a big hurry you might transliterate to "center edge" and "side edge," but these don't really roll off the tongue.
