I'm not having any luck in finding what this might refer to. Any help would be appreciated.

English translation:Cloven hoof
Explanation:
Xapat means cut, so I believe its is referring to the cloven hoof of the animal making less impact on the land than if they had full hooves like horses for example.

Thanks, Helen! The first example of 'xapat' is cloven/split/divided, and the second is 'split upper lip' :-)

Notes to answerer
Asker: Thanks, Helen :-) I was thinking about cloven too, but sheep and goats have cloven feet too, and the text is talking about cows doing less damage than these. But the text is not so well written so....

agree  Berni Armstrong: It would appear to be cloven hoof, but the following sentences make it clear that the main difference is the shape of the mouths and the configuration of the teeth. It seems the sheep and goats's bite is far more destructive to plants than that of cows.

agree  Tomasso: First appearance of xapat, clovenhoof, as pounted out second occurance may refer to upper hard palate https://www.ncbi.nlm.nih.gov/pubmed/29877576
